Poultry Processing and further processing has come along way since the poultry industry started. Almost all processing and further processing is now fully automatic, meaning that many machines now do jobs that once people used to do. Although going automatic took many jobs away it allows the industry to produce more meat weekly. This also allows the industry's companies to stay somewhat small and give good benefits to the employees. These good benefits include: a steady pay checks health insurance, bonuses, retirement plan, and some pay to further your education.

Although I grew up in the poultry industry, I was mainly exposed to live side of the industry. Processing has peaked my interest because there is so much to learn from it and you can also take that knowledge back to farms. For example, if a carcass were to have bruising it would be from the management at the grow-out farm or from improper catching. The poultry industry is like standing dominos if one falls it will make the others fall. This is why is it so important to learn how and why things are done in the processing and further processing plants.
