The summer of 2016 I completed an Internship with Wayne Farms in the Fresh Plant in Decatur, Alabama. Through this internship I was introduced to the fresh processing system. While there I was also assigned to work on a special problem, and present my findings at corporate, in Oakwood, Georgia. This special problem was titled: Reducing Salmonella from Live Through Processing. I was very nervous at the beginning of my internship. I had moved in to a new area and did not know anyone. I took this nervousness energy and put it to good use by learning anything and everything I could about the process at the plant. By opening myself up to talking and asking questions I met and made wonderful friends. It truly showed me that you learn the most when you are outside of your comfort zone. My sponsor gave free reign to me for my problem and helped when needed. In the live side, I partnered with the veterinarian to make up a Salmonella Risk Assessment Questionnaire and asked growers to complete it. In the fresh plant, I started by biomapping the whole process looking for possible areas for improvement. After implementing some new practices and a second biomap was conducted to prove that the new practices were working. Along with working on this problem I was able to tour many other facilities in the complex. This experience taught me many lessons and showed I am capable of anything with a good attitude.
